Papaya Sherbet
 

1 C. sugar 2 C. cream or evaporated milk
½ C. cold water 2 ½ C. papaya, sliced
2 TBS gelatin 1 TBS lemon juice

Mash papaya, add sugar and cook for 5 minutes..
Remove from heat and put through colander to strain. Add lemon juice. .
Soak gelatin in cold water; add papaya mixture and stir well. Cool and chill. .
Add 1 ½ C. cream and freeze. Whip ½ C. cream until very light and add to mixture..
Freeze again.
