Ukrainian Apple Squares

Even though when you stack the apples, that it seems too high, don't worry, it will be cooked down. Its like having apple pie in a square, that you can pick up with your hands, if you want.



Ukrainian Apple Squares
 

Ingredients:
2 TSP salt 5 C. sifted all-purpose flour
2 C. shortening 2 egg yolks, beaten
1 C. crushed corn flakes Milk, to make 1 1/3 C. liquid
1 C. sugar 12 or more cooking apples
2 TBSP Flour 1TSP cinnamon
1 egg white 1 C. confectioner's sugar
1 TBSP water 1/2 TSP vanilla extract

Sift together the 5 C. flour, 2 tsp salt, 2 C. shortening. Cut in with a pastry blender or 2 knives until mixture resembles coarse cornmeal.
Combine the 2 egg yolks, beaten and enough milk to make 1 1/3 C. liquid.
Slowly add egg-milk mixture to flour-shortening mixture.
Mix just until dry ingredients are moistened. Divide dough in half. Roll out one-half into 14 x 16-inch rectangle.
Place in buttered pan.
Sprinkle over Pastry the 1 C. crushed corn flakes.
Peel and slice the cooking apples and arrange apples over the corn flakes.
Combine sugar, flour, and cinnamon. Sprinkle over apple slices. Dot with butter.
Roll out other half of pastry in a 14x16-inch rectangle. Place over apples. Pinch top layer to bottom layer.
Beat 1 egg white until stiff peaks form, and brush this evenly over the top crust.
Bake in oven at 400° F for 1 hour.
While still warm, drizzle Glaze from spoon.
