Guava Muffins
 

Ingredients:
2 C. flour ¼ C. strong black coffee
1 tsp. salt 2 tsp. baking powder
¾ C. sugar 3 eggs, well beaten
¼ c. milk ¾ C. guava puree
1 tsp. baking soda ½ C. shortening

Preheat oven to 325°
Oil muffin pan.
Cream shortening and sugar. Add beaten eggs and mix thoroughly.
Sift flour, salt, baking soda, and baking powder three times.
Mix guava puree, milk, and coffee. Add dry ingredients alternately with guava mixture.
Pour batter into prepared pan, filling ½ full. Bake for 30 minutes.
Makes 20 medium muffins.
