Mango Bars
 

Ingredients:
2 ¼ C. flour 1 2/3 C. butter or margarine
1 ¾ C. sugar 4 C. chopped mangoes
1/3 C. water 3 TBS. cornstarch
2 C. quick oats 3 TBS. water
1 tsp. lemon juice

Preheat oven to 350°
Combine 2 C. of flour with ½ C. of sugar. Cut in 1 C. butter. Press into a 13x9x2 in. cake pan. Bake for 7-10 minutes or until lightly browned.
In a sauce pan, combine mangoes, ¾ C. of sugar, 1/3 C. water and lemon juice. Cook until mangoes are tender, about 10 minutes.
Combine cornstarch and 3 TBS water. Stir into mango mixture and cook until thickened. Cool slightly. Pour over prepared crust.
Combine oats,and remaining ¼ C. flour and ½ C. sugar. Cut in remaining 2/3 C. butter. Sprinkle over mango mixture. Bake for 50 minutes. Cool and cut into bars.
Makes 4 doz.
