Pumpkin Bread
Moist and Delicately Spiced
 

Ingredients:
1 C. brown sugar, firmly packed ½ C. granulated sugar
1 C. cooked or canned pumpkin ½ C. salad oil
2 eggs, unbeaten 2 C. sifted all-purpose flour
1 tsp. soda ½ tsp. each salt, nutmeg, and cinnamon
¼ tsp. ginger 1 C. raisins
½ C. chopped nuts ¼ C. water


Combine sugars, pumpkin, oil, and eggs; beat until well blended. Sift together flour, soda, salt, and spices; addadd and mix well. Stir in raisins, nuts, and water. Spoon into well oiled 9" X 5" X 3" loaf pan. Bake at 350° for 65 to 75 minutes, or until done when tested. Turn out on rack to cool. Makes 1 loaf.



Banana Nut Bread
 

Ingredients:
1 ¾ C. sifted all-purpose flour 2/3 C. brown sugar, firmly packed
¼ tsp. soda 2 eggs - unbeaten
½ tsp. salt 1/3 C. shortening
2 tsp. baking powder 1 C. mashed ripe bananas (2 or 3)
½ C. coarsely chopped
         walnuts or pecans


Sift together flour, baking powder, soda, and salt and set aside. In mixing bowl, thouroughly cream sugar and shortening. Add eggs and beat well. Stir in mashed bananas and then the flour-nut mixture, beating just until smooth. Pour into greased 9" X 5" X 3" loaf pan. Bake at 350° for about an hour, or until done when tested. Turn out on rack to cool. Makes 1 loaf.



Simply Wonderful Fruit Bread
 

Ingredients:
½ C. brown sugar, firmly packed 1 C. diced glace fruit or chopped dates
2 ½ C. buiscuit mix ¼ C. melted butter or margarine
¼ tsp. mace (optional) 2 eggs - unbeaten
½ C. coarsely chopped
         walnuts or pecans
1 C. mashed ripe bananas (2 or 3)
¾ C. sour cream

Combine sugar, biscuit mix, mace, and glace fruit. Mix to combine. Add melted butter, eggs, and sour cream. Stir until smooth. Spoon in greased 9" X 5" X 3" loaf pan. Bake in 350° oven for 45 minutes until golden brown. Remove from pan and cool on rack. Makes 1 loaf.



Sweet Rolls
 

Ingredients:
Starter: 2 C. flour
2 C. warm water
1TBS. dry yeast (or 1 pkg. yeast)
Set the night before or 2 hours ahead - - set at room temperature. Liquid will be bubbly.

Add:
2 TBS. sugar ¼ tsp soda
1 tsp. salt 1 or 2 eggs - mixed
2 TBS. cooking oil 3½ C. flour

Mix and let rise for 2 to 4 hours.
Roll out, spread with butter; sprinkle with sugar-cinnamon mixture; add raisins or chopped nuts if desired.
Roll into roll and slice into 1 inch slices. Place in pan and let rise for 1 to 2 hours.
Bake at 375° for 15 minutes.
Ice before serving if desired.
