Pork Chops and Browned Rice
 

Ingredients:
1 TBS. fat 4 pork chops - ½" inch thick
1 C. rice, uncooked 2 C. tomatoes, canned
1 tsp. salt 3 TBS. green pepper, chopped
¼ tsp. pepper ¼ chili powder
1. C water 2 TBS. onions, chopped

Brown chops in fat. Remove.
Place rice in hot fat, tstirring constantyly until browned.
Add tomatoes (with liquid) and remaining ingredients. Stir well, breaking up tomatoes.

Cover and cook over low heat until done. About 30 minutes.

Makes 4 servings.

For 8 servings, double all ingredients EXCEPT pepper and chili powder. Use the same amount of these. Use ¼ C. onions.
